As you can imagine, the environment is critical to our success, so our practices of growing and harvesting are aligned with our values of sustainability and land stewardship.
Ellijay shiitake and oyster mushrooms are harvested daily; immediately refrigerated for maximum freshness and shelf-life longevity, then promptly packaged, numbered and shipped out for delivery.
